How to Make Mumbai-Style Pav Bhaji at Home

Step 1: Boil the Vegetables

Wash and roughly chop the potatoes, cauliflower and carrot. Add them to a pressure cooker along with green peas and enough water to cover the vegetables.

Pressure-cook for around three whistles, or until the vegetables become soft. Allow the pressure to release naturally before opening the cooker.

Drain excess water if necessary, but reserve a little cooking liquid for adjusting the consistency of the bhaji. Mash the vegetables thoroughly using a potato masher and keep them aside.

Step 2: Prepare the Onion-Tomato Masala

Heat oil and two tablespoons of butter in a large kadai or heavy-bottomed pan.

Add finely chopped onions and sauté until soft and lightly golden. Add ginger-garlic paste and green chillies. Cook for another minute until the raw smell disappears.

Add chopped tomatoes and cook until they become soft and begin breaking down. Mash them slightly with the back of a spoon to create a thick masala base.

Step 3: Add the Pav Bhaji Spices

Add turmeric powder, Kashmiri red chilli powder, coriander powder and pav bhaji masala to the tomato mixture.

Mix well and cook for two to three minutes over medium heat. Add a small splash of water if the spices begin sticking to the pan.

The masala should become aromatic and develop a rich colour.

Step 4: Add Capsicum and Mashed Vegetables

Add the chopped capsicum and cook for a few minutes until slightly softened.

Now add the mashed vegetables to the kadai. Mix thoroughly so that the vegetable mixture combines with the prepared masala.

Add some reserved cooking liquid or warm water to achieve a thick but spreadable consistency.

Step 5: Mash and Cook the Bhaji

Use a potato masher to mash the mixture directly in the kadai. Traditional street-style pav bhaji has a relatively smooth texture, so continue mashing until the vegetables blend well with the masala.

Add salt and simmer for around 10-15 minutes over low heat. Stir frequently to prevent the bhaji from sticking to the bottom.

Add the remaining butter and lemon juice. Mix well and finish with freshly chopped coriander leaves.

Step 6: Toast the Pav With Butter

Heat a flat tawa or pan and add a little butter. Sprinkle a pinch of pav bhaji masala over it.

Slice the pav horizontally and place the cut sides on the tawa. Toast until they become lightly golden and absorb the buttery masala.

Turn them briefly if needed, but avoid making the buns too crispy. They should remain soft inside.

Step 7: Serve Hot With Traditional Accompaniments

Transfer the hot bhaji into serving bowls and add a small cube of butter on top.

Serve with freshly toasted pav, finely chopped onions, lemon wedges and coriander leaves. You can also sprinkle a little extra pav bhaji masala over the bhaji for a stronger flavour.

Tips to Get the Authentic Street-Style Pav Bhaji Taste

  • Use ripe tomatoes to create a naturally tangy and thick gravy.
  • Mash the vegetables thoroughly for a smooth street-style texture.
  • Cook the masala properly before adding the mashed vegetables.
  • Use pav bhaji masala instead of relying only on individual spices.
  • Add butter gradually to build flavour without making the dish excessively greasy.
  • Simmer the bhaji for a few extra minutes so the spices blend properly.
  • Toast the pav just before serving to keep it warm and soft.
  • Adjust the chilli powder according to your preferred spice level.

Vegetable Variations You Can Try

You can customise pav bhaji using vegetables available in your kitchen. Beetroot can add a deeper colour, while beans can provide additional texture. A small amount of cabbage can also be included with the other vegetables.

However, avoid adding too many different vegetables, as they may change the familiar taste of Mumbai-style pav bhaji.

The secret to achieving its familiar flavour at home lies in preparing a well-cooked masala, mashing the vegetables properly and allowing the bhaji to simmer until everything blends together.
