  • Kulfi molds or small cups: To freeze the kulfi

Instructions:


1. Prepare the Milk Base:

  • In a heavy-bottomed pan, pour the full-fat milk and bring it to a boil on medium heat.
  • Once the milk starts boiling, reduce the heat and let it simmer. Stir it occasionally to prevent the milk from sticking to the bottom of the pan.
  • Keep cooking the milk for about 20-30 minutes, until it thickens and reduces by almost half. This will concentrate the milk and give the kulfi its creamy texture.

2. Add Condensed Milk and Sugar:


  • Once the milk is reduced, add the condensed milk and sugar to the pan.
  • Stir well to dissolve the sugar completely, making sure the milk remains smooth and creamy.
  • Continue simmering the milk mixture for an additional 10-15 minutes.

3. Add Flavorings:

  • Once the milk mixture has thickened to a creamy consistency, add the cardamom powder and saffron strands (if using).
  • Stir well to infuse the flavors into the mixture.
  • If you like a floral aroma, add a few drops of rosewater or kewra water.

4. Add the Cream:

  • Add the heavy cream to the mixture and stir to combine.
