Ingredients for Paneer Lababdar

To prepare this delicious curry for around three to four people, you will need:

  • 250 grams paneer, cut into cubes
  • 3 medium-sized tomatoes, chopped
  • 1 large onion, finely chopped
  • 1 small onion, sliced
  • 1 tablespoon ginger-garlic paste
  • 10-12 cashews, soaked in warm water
  • 1 green chilli, chopped
  • 2 tablespoons fresh cream
  • 2 tablespoons butter
  • 1 tablespoon oil
  • 1 teaspoon cumin seeds
  • 1 teaspoon Kashmiri red chilli powder
  • ½ teaspoon turmeric powder
  • 1 teaspoon coriander powder
  • ½ teaspoon garam masala
  • ½ teaspoon kasuri methi
  • Salt to taste
  • Fresh coriander leaves for garnishing
  • A little water as required

How to Prepare Restaurant-Style Paneer Lababdar

Step 1: Prepare the Tomato-Cashew Paste

Heat a little oil in a pan and add chopped tomatoes, sliced onion, green chilli and soaked cashews. Cook them until the tomatoes soften and the onions become translucent. Allow the mixture to cool before blending it into a smooth paste. This forms the creamy base of the curry.

Step 2: Cook the Masala

Heat butter and oil in a kadai. Add cumin seeds and allow them to crackle. Add finely chopped onion and sauté until golden. Stir in ginger-garlic paste and cook until its raw smell disappears.

Add turmeric powder, Kashmiri red chilli powder and coriander powder. Mix well, keeping the heat low to prevent the spices from burning.

Step 3: Add the Gravy

Pour the prepared tomato-cashew paste into the kadai. Mix thoroughly and cook for around 6-8 minutes, stirring occasionally. Add a little water if the gravy becomes too thick.

Cook until the masala is well blended and begins releasing butter along the sides. Season with salt and garam masala.

Step 4: Add Paneer Cubes

Gently add the paneer cubes to the gravy and mix carefully so they do not break. Let everything simmer for 3-4 minutes on low heat. Avoid overcooking the paneer, as it can become firm.

Step 5: Finish With Cream and Kasuri Methi

Crush kasuri methi between your palms and sprinkle it over the curry. Add fresh cream and stir gently. Simmer for another minute, then switch off the heat. Garnish with chopped coriander leaves.

Tips for Rich and Creamy Paneer Lababdar

  • Use fresh, soft paneer for the best texture.
  • Soak cashews before blending to achieve a smoother gravy.
  • Kashmiri red chilli powder adds colour without making the curry excessively spicy.
  • Add cream towards the end to retain its richness.
