Ingredients for Gujarati Methi Thepla

To prepare approximately 8-10 medium-sized theplas, you will need:

  • 2 cups whole wheat flour
  • 1 cup fresh methi (fenugreek) leaves, finely chopped
  • 2 tablespoons besan (gram flour)
  • 2 tablespoons curd
  • 1 tablespoon oil for the dough
  • 1 teaspoon ginger-green chilli paste
  • ½ teaspoon turmeric powder
  • 1 teaspoon red chilli powder
  • 1 teaspoon coriander powder
  • ½ teaspoon cumin powder
  • ½ teaspoon carom seeds (ajwain)
  • ½ teaspoon sesame seeds
  • A pinch of asafoetida (hing)
  • Salt to taste
  • Water as required
  • Oil or ghee for cooking

How to Prepare Soft and Fluffy Methi Thepla

Step 1: Prepare the Fenugreek Leaves

Separate the fresh methi leaves from their thick stems. Wash them thoroughly under running water to remove dirt and impurities. Drain the water completely and finely chop the leaves.

If the fenugreek leaves taste particularly bitter, you can mix them with a small pinch of salt and leave them aside for a few minutes before adding them to the dough.

Step 2: Mix the Dry Ingredients

Take a large mixing bowl and add whole wheat flour and besan. Add turmeric powder, red chilli powder, coriander powder, cumin powder, carom seeds, sesame seeds, asafoetida and salt.

Mix the ingredients properly so that the spices are evenly distributed throughout the flour.

Step 3: Add Methi and Other Ingredients

Add the chopped fenugreek leaves, ginger-green chilli paste, curd and one tablespoon of oil to the flour mixture.

Combine everything using your hands. The methi leaves and curd will release some moisture, so add water gradually rather than pouring it all at once.

Step 4: Knead a Soft Dough

Slowly add water and knead the mixture into a smooth, soft dough. It should be pliable but not sticky. Add a little flour if it becomes too wet.

Apply a few drops of oil over the dough, cover it with a clean cloth and let it rest for around 15-20 minutes. This helps the ingredients combine and makes rolling easier.

Step 5: Divide and Roll the Theplas

Divide the dough into equal-sized portions and shape them into smooth balls. Dust each ball lightly with wheat flour.

Roll one portion into a thin, round flatbread using a rolling pin. Try to maintain an even thickness so that the thepla cooks properly on both sides.

Step 6: Cook on a Hot Tawa

Heat a flat tawa over medium heat. Place the rolled thepla on it and cook until small bubbles begin to appear.

Flip it over and apply a little oil or ghee to the cooked side. Turn it again and gently press the edges with a spatula. Cook until both sides develop light golden-brown spots.

Repeat the process with the remaining dough portions.

Step 7: Keep the Theplas Soft

Transfer the cooked theplas to a plate lined with a clean kitchen cloth. Stack them one over another and cover them with another cloth or place them in an insulated casserole.

This helps retain moisture and keeps the theplas soft for longer.

Tips to Make Methi Thepla Soft and Fluffy

  • Use fresh, finely chopped methi leaves for better flavour.
  • Knead a soft dough rather than making it too firm.
  • Add water gradually because fenugreek leaves and curd release moisture.
  • Allow the dough to rest before rolling.
  • Roll the theplas evenly so they cook uniformly.
  • Cook over medium heat to prevent the outside from becoming hard before the inside is cooked.
  • Avoid using too much dry flour while rolling, as it can make the theplas dry.
