Ingredients:

1 cup millets (any variety such as foxtail, barnyard, or pearl millet)
2 cups water
1 cup yogurt (curd)
1/2 cup milk (optional, adjust for desired consistency)
Salt to taste
1 tablespoon oil
1 teaspoon mustard seeds
1 teaspoon split urad dal (black gram)
1 teaspoon finely chopped ginger
1-2 green chilies, finely chopped (adjust according to spice preference)
Few curry leaves
2 tablespoons finely chopped coriander leaves (cilantro) for garnish

Instructions:

Rinsing and Soaking:

Begin by rinsing the millets under cold water until the water runs clear. This helps remove any impurities.

Soak the rinsed millets in water for about 15-20 minutes. Soaking aids in better cooking and digestion.

Cooking Millets:

Drain the soaked millets and transfer them to a pressure cooker or a pot.

Add 2 cups of water and a pinch of salt. Pressure cook for about 3 whistles or cook covered until the millets are soft and cooked through.

If cooking in a pot, it may take around 15-20 minutes.

Once cooked, fluff the millets with a fork and let them cool down to room temperature.

Preparing Curd Mixture:

In a mixing bowl, whisk the yogurt until smooth. You can adjust the consistency by adding milk if desired.

Add salt to taste and mix well.

Tempering:

Heat oil in a small pan. Add mustard seeds and let them splutter.

Add split urad dal and sauté until it turns golden brown.

Add finely chopped ginger, green chilies, and curry leaves. Sauté for a minute until fragrant.

Turn off the heat and let the tempering cool down slightly.

Assembling:

Once the cooked millets have cooled down, gently mix them with the prepared curd mixture.

Add the tempering to the millet-curd mixture and give it a good mix, ensuring the tempering is evenly distributed.

Garnishing:

Garnish the Millet Curd Rice with finely chopped coriander leaves (cilantro) for an extra burst of freshness and flavor.

Serving:

Serve the Millet Curd Rice chilled or at room temperature.

It can be enjoyed as is or paired with a side of pickle or papad for added crunch and tang.
