Why Fermented Foods Are Becoming Popular Again Around the World
Fermentation may look like a modern food trend, but humans have been using it for thousands of years. Long before refrigerators existed, fermentation helped communities preserve milk, vegetables, grains and other foods. Today, the same process is attracting attention for very different reasons. Kimchi , kefir, sauerkraut, sourdough , yoghurt and kombucha have become familiar far beyond the regions where they originated. Growing interest in gut health is one reason for the renewed enthusiasm, but taste and tradition matter too. Fermented foods have distinctive flavours and textures that can make everyday meals more interesting. Their revival is therefore less about discovering something new and more about rediscovering an old culinary technology.
