Finely chopped mushrooms – 1 bowl
Gram flour – 2-3 tablespoons
Grated ginger – 1 teaspoon
Chopped green chilies – 2
Turmeric – 1/2 teaspoon
Red chili powder – 1/2 teaspoon
Coriander powder – 1 teaspoon

For the gravy

Tomatoes – 1-2
Green chilies – 1
Ginger piece – 1 inch
Coriander powder – 1/2 teaspoon
Turmeric – 1/2 teaspoon
Whole cumin seeds – 1 teaspoon

Bay leaves – 2
Red chili powder – 1/2 teaspoon
Fresh cream – as needed
Green coriander leaves – 2 tablespoons
Garam masala – 1 teaspoon
Oil – 4-5 tablespoons

Recipe

First, finely chop the mushrooms. After this, heat 2 teaspoons of oil in a pan.
- Once the oil is hot, add grated ginger and chopped green chilies and fry them. After a while, add red chili powder, coriander powder, and turmeric.

- After frying for a while, add 1-2 teaspoons of water. When the spices are well roasted, add the mushrooms and cook.
- Now take a vessel and add the roasted mushrooms. Add gram flour and salt to taste, mix well, and mash them thoroughly.
- Now heat oil in a pan. After the oil is hot, make koftas from the prepared mixture and deep-fry them.
- Fry the koftas until golden brown. Then remove them to a plate. Similarly, prepare koftas from the entire mixture.
- Now start making the gravy and grind the tomatoes, ginger, and green chilies into a paste.
- Now, pour oil into the pan and, after heating, add whole cumin seeds and fry them. After this, add the bay leaf.

- After frying them well, add tomato paste and fry for 1-2 minutes. Then add all the dry spices, including turmeric and red chili, and let them cook.

- When the spices start releasing oil, add fresh cream and fry. Once the spices are well fried, add water as needed and bring to a boil.

- After the water boils, add the pre-prepared koftas to the gravy. Now add garam masala and salt to taste and mix.

- After this, cover the pan and let the vegetable cook for 5-7 minutes. After this, turn off the gas.

- The delicious mushroom kofta is ready. Garnish it with green coriander leaves before serving.
