Here's a simplified version of homemade lasagna that can be easily prepared in an Indian household:

Ingredients:

For the Sauce:
2 tablespoons cooking oil
1 onion, finely chopped
2 cloves garlic, minced
1 cup mixed vegetables (such as bell peppers, carrots, and peas), finely chopped
1 can (400g) tomato puree or 4-5 ripe tomatoes, blended
1 teaspoon dried oregano
1 teaspoon dried basil
Salt and pepper to taste

For the Filling:

250g paneer, crumbled
1 cup spinach leaves, finely chopped
1/2 cup sweet corn kernels
Salt and pepper to taste

For Assembly:

6-8 lasagna sheets, boiled until al dente
1 cup grated mozzarella cheese
1/2 cup grated processed cheese or cheddar cheese

Instructions:

Heat the cooking oil in a pan over medium heat. Add the chopped onion and garlic, and sauté until they turn translucent.


Add the mixed vegetables to the pan and cook until they are slightly tender about 5-7 minutes.

Pour in the tomato puree or blended tomatoes and stir well—season with dried oregano, dried basil, salt, and pepper. Allow the sauce to simmer for 10-15 minutes, or until it thickens slightly. Remove from heat and set aside.
In a mixing bowl, combine the crumbled paneer, chopped spinach leaves, sweet corn kernels, salt, and pepper. Mix well to combine.

Preheat your oven to 180°C (350°F).

To assemble the lasagna, spread a thin layer of tomato sauce at the bottom of a baking dish. Place a layer of boiled lasagna sheets over the sauce.
