  • Coriander powder – 1 tsp

Method


  • Cook pasta in boiling water until firm, then drain and keep aside.
  • Blend soaked cashews with a little water to make a smooth paste.
  • Heat oil in a pan, add cumin seeds, onions, ginger, and garlic. Sauté well.
  • Add tomatoes and spices, cooking until the mixture becomes soft.
  • Mix in cashew paste and cook until it forms a creamy masala sauce.
  • Add spinach and let it wilt.
  • Toss in cooked pasta and mix thoroughly.

  • Pasta – 1 cup

  • Butter – 2 tbsp
  • Wheat flour – 1½ tbsp
  • Milk – 1½ cup
  • Salt – to taste

  • Italian seasoning – ¼ tsp
  • Fresh basil – 7–8 leaves

Method


  • Cook pasta until al dente, then drain and set aside.
  • Heat olive oil and sauté all vegetables with salt until slightly tender. Remove and keep aside.
  • In the same pan, melt butter and add wheat flour to form a light roux.
  • Slowly add milk while stirring continuously to avoid lumps.
  • Cook until the sauce thickens into a creamy consistency.
  • Add chilli flakes, oregano, Italian seasoning, salt, and pepper.
  • Stir in cheese until melted.
  • Add sautéed vegetables, pasta, and a little pasta water.
  • Mix well, cover, and cook for 4–5 minutes.
  • Garnish with basil leaves and serve hot.
