Bharwa Karela Recipe: A Flavorful Stuffed Bitter Gourd Delight

Ingredients:

4-5 medium-sized karela (bitter gourd)
2 tbsp salt (for reducing bitterness)
2 tbsp oil (for shallow frying)
1 tsp cumin seeds
1 onion (finely chopped)
2 tbsp gram flour (besan)
1 tsp fennel seeds
1 tsp coriander powder
½ tsp turmeric powder
1 tsp red chili powder
1 tsp garam masala
1 tbsp tamarind pulp or lemon juice
Salt to taste

Preparation Steps:


Step 1: Prepping the Bitter Gourd

Wash the karela thoroughly and make a slit along its length.


Remove the seeds and inner pulp using a spoon.

Rub salt all over the karela, including the inner cavity, and let it rest for 30 minutes.

Rinse with water and pat dry to reduce bitterness.

Step 2: Preparing the Stuffing


Heat 1 tbsp oil in a pan and add cumin seeds.


Add chopped onions and sauté until golden brown.

Stir in gram flour, fennel seeds, coriander powder, turmeric, red chili powder, and salt.

Cook for 2 minutes, then add tamarind pulp or lemon juice.

Mix well and allow the stuffing to cool.

Step 3: Stuffing and Cooking


Fill each karela with the prepared stuffing and tie with a thread to keep it intact.

Heat 1 tbsp oil in a pan and place the stuffed karelas.

Cover and cook on low heat, turning occasionally until golden brown and tender.
