Ingredients
- Take 3 to 4 overripe bananas and cut them into bite size pieces
- Refined flour (maida) , for dusting
- Ice cold water, for dipping
- 1 tsp sesame seeds
For the batter
- 1 cup refined flour (maida)
- A pinch of salt
- Water as per the requirement
- ¼ tsp baking powder
For the caramel
- ½ cup sugar
- 1 or 2 tbsp water
For garnishing
- Whipped cream or vanilla ice cream (as per your preference)
- Mint leaves
- Sesame seeds
Method
- Prepare a batter by mixing together the refined flour, salt, baking powder with required amount of water to form a smooth, lump free batter with a coating consistency. Leave it to rest for 5 to 10 mins.
- Slightly dust the cut banana pieces with refined flour, make sure they are coated evenly. Dip them into the batter.
- Deep fry in the medium hot oil until bananas attain a golden brown colour and are crispy and cooked properly.
- Remove them from the oil with a slotted spoon and drain on absorbent paper.
- Meanwhile, add sugar and 1 or 2 tablespoons of water to one pan. Cook over medium heat until the sugar melts and turns into a deep golden colour.
- Working quickly, add the fried bananas to the hot caramel and toss gently until each piece is evenly coated.
- Immediately transfer the caramel coated bananas into a cold water bath, so the caramel hardens and forms a crispy shell around them. Remove and add them on an absorbent paper.
- Sprinkle with sesame seeds and serve immediately with whipped cream or a scoop of vanilla ice cream. Garnish it with mint leaves and extra sesame seeds.
- You can add toppings of your own choice too.
