Ingredients You'll Need

For the Tortilla Chips
  • 8 corn tortillas
  • 2 tablespoons olive oil
  • ½ teaspoon salt
  • ½ teaspoon paprika (optional)
For the Toppings
  • 1 cup shredded cheddar cheese
  • ½ cup mozzarella cheese
  • 1 small tomato, diced
  • 1 jalapeño, sliced
  • ¼ cup black beans
  • ¼ cup sweet corn
  • 2 tablespoons chopped coriander
  • Salsa, sour cream, or guacamole for serving

Step 1: Make the Tortilla Chips

Preheat your oven to 180°C (350°F). Cut each tortilla into six triangular wedges. Place them in a bowl, drizzle with olive oil, and sprinkle with salt and paprika. Toss well to coat evenly.


Arrange the wedges in a single layer on a baking tray. Bake for 10-15 minutes or until golden and crisp. Allow them to cool completely, they'll become even crunchier as they cool.

While the chips are baking, chop the vegetables and prepare the toppings. Shred the cheese and keep all ingredients ready for quick assembly.
