Ingredients:
2 cups all-purpose flour (Maida)
1/4 cup semolina (Sooji)
1/2 cup yogurt (Curd)
1/2 tsp baking powder
1/4 tsp baking soda
1 tsp sugar
Salt to taste
Lukewarm water for kneading
150 grams paneer (Cottage cheese)

2 tbsp fresh coriander leaves
1/2 tsp red chili powder
1/2 tsp chaat masala
Salt to taste
Oil for frying


Preparation Steps

Begin by sifting the all-purpose flour and semolina into a large mixing bowl. Incorporate salt, sugar, baking powder, baking soda, and two tablespoons of oil, mixing thoroughly.


Create a small well in the center and add the yogurt. Gradually knead a soft dough using lukewarm water.


Once the dough is smooth, coat it lightly with oil, cover it with a damp cloth, and let it rest in a warm area for about 2 hours to allow it to rise.


In the meantime, prepare the stuffing by combining grated paneer, finely chopped coriander leaves, red chili powder, chaat masala, and salt in a bowl. Mix gently to avoid crumbling the paneer.


After the resting period, lightly knead the dough again and divide it into pieces slightly larger than a lemon.
