1. Tandoori Paneer Tikka

No tandoor? No problem! Oven-baked paneer tikka can be just as flavorful.

How to make: Cut paneer into bite-sized pieces and prep capsicum, tomato, and onion. Marinate with sour cream, spices, lemon juice, ajwain, salt, and a little oil. Thread the paneer and veggies onto skewers, brush with butter or oil, and bake at 230-250°C for 15–20 minutes until lightly browned. Serve with green chutney, chaat masala, and a lemon squeeze.


2. Crispy Vegetable Pakoras

Perfect with evening tea or during a card game, pakoras are a Diwali must.

How to make: Thinly slice veggies like cabbage, onion, carrot, or cauliflower. Mix with herbs, green chillies, ginger-garlic paste, garam masala, and flour to make a stiff dough. Drop spoonfuls into hot oil, flatten slightly, and fry until crisp and golden.
