Ingredients

For the stuffing
  • 1 bowl chopped coriander leaves
  • 1/4 cup grated dry coconut
  • 1 onion, finely chopped
  • 1 tsp ginger-garlic paste
  • 1 tsp red chilli powder
  • 1 tbsp poppy seeds
  • Salt to taste
  • 2 tbsp raisins
  • 2 tbsp broken cashews
  • 1/2 tsp cumin powder
  • 1/2 tsp coriander powder
  • Mustard oil for cooking

For the outer covering
  • 1 cup gram flour (besan)
  • 1/2 cup wheat flour
  • Salt to taste
  • A pinch of turmeric
  • 1/2 tsp chilli powder
  • A pinch of hing (asafoetida)

How to Make Sambar Vadi

Start by heating mustard oil in a pan. Add chopped onions and sauté until they turn light pink. Mix in ginger-garlic paste and red chilli powder, allowing the aroma to build.

Next, add coconut, poppy seeds, cumin powder, coriander powder, raisins, cashews, and salt. Stir well so the mixture blends evenly. Finally, add fresh coriander leaves and cook for a couple of minutes before turning off the heat. Let the stuffing cool.

For the outer dough, combine gram flour, wheat flour, salt, turmeric, chilli powder, and hing. Knead into a soft dough using water and let it rest.

Roll small portions of dough into thin discs. Place a spoonful of stuffing in the center, fold carefully, and seal the edges using water.

Repeat the process to prepare all pieces.


Heat mustard oil in a pan and deep-fry the prepared wadis on medium flame until golden and crisp.

Serving Suggestion

Serve hot Sambar Vadi with green chutney or tamarind chutney. It also pairs well with fried green chilies for an extra spicy kick.
