Step 1: Prepare the Idlis

Cut the leftover idlis into bite-sized cubes. If the idlis are cold from the refrigerator, that is even better because they hold their shape nicely while frying.

Step 2: Crisp the Idli Pieces

Heat 1 tablespoon oil in a pan. Add the idli cubes and fry them on medium heat until they turn light golden and slightly crisp from the edges. Remove and keep aside.

Step 3: Saute the Vegetables
