It is easy to customise according to your preferred level of spice and the ingredients available in your kitchen. Fresh vegetables provide crunch, peanuts add texture, and chutneys bring together the different flavours.

The best part is that the snack takes only a short time to assemble once the ingredients are ready.

Ingredients for homemade makhana bhel

For two servings, gather:

  • Two cups makhana or fox nuts
  • One small onion, finely chopped, optional
  • One small tomato, finely chopped
  • Half a cucumber, finely chopped
  • Two tablespoons roasted peanuts
  • Two tablespoons chopped coriander
  • Half a teaspoon roasted cumin powder
  • A pinch of red chilli powder
  • Salt to taste
  • One teaspoon oil or ghee
  • Green chutney and tamarind chutney, as required
  • A little lemon juice
You can omit the onion if you prefer a simpler version.

Roast the makhana

Heat the oil or ghee in a pan over a low to medium flame. Add the makhana and roast them, stirring regularly so they heat evenly.

Continue until they become crisp. The time required depends on the quantity and size of the fox nuts, so check their texture rather than relying only on a timer.

Allow them to cool briefly before mixing them with the other ingredients. This helps preserve their crunch.

Prepare the vegetables

Wash the cucumber, tomato and coriander thoroughly under running water. Chop them into small, reasonably even pieces.

If using onion, chop it finely so that its flavour does not overpower the other ingredients.

Keep the chutneys ready. You can use homemade versions or suitable ready-made products, adjusting the quantities according to their sweetness, saltiness and spice level.

Assemble the bhel

Place the roasted makhana in a large bowl. Add the chopped vegetables, peanuts, coriander, cumin powder, chilli powder and salt.

Mix gently before adding the chutneys and lemon juice. Start with small quantities of chutney, taste the mixture and adjust the seasoning.

For a crunchier result, add the chutneys just before serving rather than allowing the mixture to stand.

Make it your own

You can include boiled sweetcorn, grated carrot or a small quantity of pomegranate seeds for additional texture and colour.

If you prefer a milder snack, reduce the chilli powder and use more cucumber and coriander. For a tangier version, add a little extra lemon juice.

Avoid preparing a large quantity too far in advance because the vegetables and chutneys will soften the makhana.

Serving suggestions

Serve the bhel immediately in small bowls as an evening snack or a starter for a casual gathering. It can also be assembled at the table, allowing everyone to adjust the chutneys and spices.

Makhana bhel demonstrates how a familiar snack can be adapted using a different base ingredient. With crisp fox nuts, fresh vegetables and balanced seasoning, it is a convenient addition to a varied vegetarian menu.
