Poori Chole Halwa Recipe: How To Make This Traditional Meal At Home

Poori, Chole and halwa are a familiar combination in many Indian households, especially during festive celebrations, pujas and special family meals. The meal brings together three distinct flavours: crispy pooris, spicy chickpea curry and soft, sweet halwa. Although each dish requires separate preparation, you can make them together with a little planning.

The recipe below uses whole-wheat flour for the pooris, chickpeas for the curry and semolina for the halwa. You can prepare the chickpeas in advance to save time, while the pooris and halwa are best served fresh.


1. Ingredients For Poori

Preparation time: 20 minutes | Cooking time: 20 minutes


Ingredients:

  • 2 cups whole-wheat flour
  • ¾ cup water, approximately
  • ½ teaspoon salt
  • 1 teaspoon oil for the dough
  • Oil for deep-frying

Method:


  1. Add the whole-wheat flour and salt to a mixing bowl. Mix well.
  2. Gradually add water and knead into a firm, smooth dough. Avoid making it too soft, as this can make rolling difficult.
  3. Add a teaspoon of oil and knead briefly. Cover the dough and let it rest for 10–15 minutes.
  4. Divide the dough into small, equal-sized balls and roll each into a small circle. Keep the thickness even so the pooris cook properly.
  5. Heat oil in a deep pan. Once the oil is hot, gently slide in one poori.
  6. Press lightly with a slotted spoon to help it puff up. Flip and fry until lightly golden.
  7. Remove the poori and place it on a plate lined with kitchen paper. Repeat with the remaining dough.
Serve the pooris hot for the best texture.


2. Ingredients For Chole Masala

Preparation time: 10 minutes, excluding soaking
Cooking time
: 30-40 minutes

Ingredients:

  • 1 cup dried chickpeas
  • 2 medium tomatoes, finely chopped
  • 1 teaspoon ginger paste (optional)
  • 2 tablespoons oil or ghee
  • 1 teaspoon cumin seeds
  • ½ teaspoon turmeric powder
  • 1 teaspoon coriander powder
  • ½ teaspoon red chilli powder
  • 1 teaspoon chole masala powder
  • ½ teaspoon amchur powder (dry mango powder), optional
  • Salt to taste
  • 2 tablespoons chopped coriander leaves
  • Water as required

Method

  1. Wash the chickpeas thoroughly and soak them in water overnight. Drain and pressure-cook them with fresh water and a little salt until tender.
  2. Heat oil or ghee in a pan. Add cumin seeds and allow them to crackle.
  3. Add the ginger paste, if using, and sauté briefly.
  4. Add the chopped tomatoes, turmeric powder, coriander powder and red chilli powder. Cook until the tomatoes soften and form a thick masala.
  5. Add the chana masala powder and mix well. If you prefer a tangy flavour, add amchur powder.
  6. Add the boiled chickpeas along with some of their cooking water. Mix thoroughly.
  7. Simmer for 10-15 minutes so the chickpeas absorb the spices. Mash a few chickpeas gently to thicken the gravy.
  8. Garnish with chopped coriander leaves and serve hot.

3. Ingredients For Suji Halwa

Preparation time: 10 minutes, excluding soaking

Cooking time: 30-40 minutes

Ingredients:

  • 1 cup semolina (suji or rava)
  • ¾ cup sugar, or adjust to taste
  • 3 cups water
  • ¼ cup ghee
  • ½ teaspoon cardamom powder
  • 2 tablespoons chopped cashews and raisins, optional

Method:

  1. Heat the ghee in a heavy-bottomed pan. Add the cashews and raisins, if using, and sauté until the cashews turn lightly golden and the raisins swell. Remove and set aside.
  2. Add the semolina to the same pan and roast over a low to medium flame, stirring continuously.
  3. Continue roasting for 5–8 minutes, until the semolina releases a pleasant aroma and turns slightly golden. Avoid burning it.
  4. In a separate pan, heat the water and dissolve the sugar in it. Bring the mixture to a gentle boil.
  5. Carefully pour the hot sugar water into the roasted semolina, stirring continuously to prevent lumps. Take care, as the mixture may splutter.
  6. Cook over a low flame until the semolina absorbs the liquid and the halwa begins to thicken.
  7. Add the cardamom powder and mix well.
  8. Stir in the roasted cashews and raisins. Cook for another 2–3 minutes until the halwa reaches a soft, smooth consistency.
Serve the halwa warm alongside the poori and chana.


Tips To Make Poori Chole Halwa At Home

  • For fluffy pooris: Keep the dough firm and roll the pooris evenly. The oil should be sufficiently hot before frying.
  • For flavourful chole: Soak the chickpeas overnight and cook them until completely tender before adding them to the masala.
  • For smooth halwa: Roast the semolina slowly and stir continuously when adding hot water.
  • For better time management: Cook the chickpeas first, prepare the halwa next and fry the pooris just before serving.
  • For sweetness and spice: Adjust the sugar in the halwa and chilli powder in the chole according to your taste.

How To Serve

Arrange the hot pooris on a serving plate, add a bowl of chole masala and serve a portion of warm suji halwa on the side. You can garnish the chole with fresh coriander and serve sliced onions or lemon wedges alongside it, if desired.


This traditional combination works well for festive breakfasts, weekend brunches, religious gatherings and family celebrations. With simple ingredients and a little preparation, you can make all three dishes at home and enjoy a satisfying meal with a balance of spicy, savoury and sweet flavours.
