Ingredients For Homemade Samosas

For the dough:

  • 1 cup refined flour
  • ½ tsp carom seeds
  • 1 tbsp ghee
  • Salt to taste
  • Chilled water as required
For the potato filling:

  • 2 to 3 tbsp oil
  • 4 to 5 medium boiled potatoes
  • 1 tbsp finely chopped ginger
  • 1 tsp fennel seeds
  • 1 tsp crushed coriander
  • ½ tsp cumin seeds
  • ¼ tsp carom seeds
  • Black pepper powder to taste
  • Salt to taste
  • ¼ tsp amchur powder
  • Oil for frying

How To Prepare Samosa Dough

Add refined flour, carom seeds and ghee to a bowl. Mix thoroughly until the mixture resembles breadcrumbs. Add salt and gradually pour in chilled water while kneading.

The dough should be stiff rather than soft. Since this is a quick samosa recipe , there is no need for a long resting period.

Prepare The Spicy Aloo Filling

Heat oil in a pan and add ginger, fennel seeds, crushed coriander and cumin seeds. Cook until the spices become fragrant. Add ajwain and stir briefly.

Mash the boiled potatoes and add them to the pan. Cook for around four to five minutes, then season with black pepper and salt. Finally, add amchur powder for a mildly tangy flavour. Mix everything well and allow the filling to cool.

Shape And Fill The Samosas

Divide the dough into equal portions and roll each portion into a long oval shape. Cut it into two halves. Take one half and fold it into a cone, sealing the edge with a little water-flour paste.

Add the cooled potato filling without overstuffing the cone. Bring the edges together and seal firmly so the samosa does not open during frying.

Fry Until Golden And Crispy

Heat oil and begin frying the samosas over low to medium heat. Once they start cooking properly, gradually increase the heat and continue frying until they turn golden brown and crisp.

Remove the samosas and place them on absorbent paper to remove excess oil. Serve immediately while they are hot.

Best Chutneys To Serve With Samosas

A crispy samosa is even better with the right accompaniment. Serve these homemade samosas with fresh green mint chutney and sweet-tangy tamarind chutney. The combination of spicy potato filling and contrasting chutneys makes this quick snack perfect for Raksha Bandhan.
