Homemade Pani Puri: Easy Street-Style Chaat You Can Make Anytime

1. Ingredients You’ll Need

For puri:
  • Semolina (sooji): 1 cup
  • All-purpose flour (maida)
  • A pinch of salt
  • Water for kneading
  • Oil for deep frying
For stuffing:
  • 2 boiled potatoes (mashed)
  • 1 cup boiled chickpeas (optional but tasty)
  • Chaat masala
  • Salt and red chilli powder
For spicy pani:
  • 1 cup fresh mint leaves
  • ½ cup coriander leavesGreen chillies
  • 2-3 green chillies
  • 1 small piece ginger
  • 1-2 tbsp tamarind pulp
  • 1 tsp roasted cumin powder
  • Black salt (to taste)
  • Regular salt
  • 4-5 cups chilled water

2. Method to Make Puri (Crispy Shells)

Step 1: Prepare the dough

Mix semolina, a little maida, salt, and water to form a tight dough. Knead well until smooth. Cover and rest for 20-30 minutes.

Step 2: Roll the puris

Divide the dough into small balls. Roll each one into thin, even circles. The thinner they are, the crispier they turn out.


Step 3: Cut and shape

Use a small round cutter or bottle cap to cut perfect small discs.

Step 4: Fry the puris

Heat oil on medium flame. Drop puris one by one, they will puff up quickly. Fry until golden and crisp. Drain on tissue paper and cool completely.


3. Prepare the Pani (Flavoured Water)

Blend mint, coriander, green chillies, and ginger with a little water into a smooth paste.

Mix it with:

  • Tamarind pulp
  • Roasted cumin powder
  • Black salt and salt
  • Cold water
Chill before serving for best taste.

4. Prepare the Filling

Mix mashed potatoes, chickpeas, chaat masala, salt, and chilli powder until well combined. This forms the soft, spicy base inside each puri.

5. Assemble the Pani Puri

  • Crack the top of each puri
  • Add stuffing
  • Pour or dip in spicy pani
  • Eat immediately for maximum crunch and flavour
