Vangyache Kaap is a simple yet delicious preparation where brinjal slices are coated in spiced rice flour or semolina (rava) and shallow-fried to golden perfection. It is mildly spiced, allowing the natural taste of the eggplant to shine while adding a delightful crunch.


Ingredients Needed

To prepare Vangyache Kaap, you will need:


1 large brinjal (baingan / eggplant)
½ cup rice flour or semolina (rava)
1 teaspoon red chili powder
½ teaspoon turmeric powder
1 teaspoon coriander powder
1 teaspoon garam masala (optional)
Salt to taste
2 tablespoons oil for shallow frying

Step-by-Step Preparation

1. Slice the Brinjal

Wash the brinjal and cut it into thin round slices. Keep them about ½ cm thick for a balanced texture.


Sprinkle salt over the slices and let them rest for 5-10 minutes. This helps remove excess moisture and reduces bitterness.

2. Prepare the Coating

In a plate, mix rice flour (or semolina), red chili powder, turmeric powder, coriander powder, and garam masala.

Adjust salt if needed, keeping in mind that the brinjal already has some salt.

3. Coat the Slices


Lightly pat dry the brinjal slices with a paper towel.

Coat each slice in the prepared flour mixture, ensuring an even layer.
