Ingredients

For Manchurian balls:

  • 1 cup finely chopped cabbage
  • 1/2 cup grated carrot
  • 1/4 cup finely chopped capsicum
  • 2–3 tbsp all-purpose flour (maida)
  • 2 tbsp cornflour
  • Salt to taste
  • Black pepper to taste
  • Oil for frying

For Manchurian sauce:

  • 2 tbsp oil
  • 1 tbsp finely chopped garlic
  • 1 tbsp finely chopped ginger
  • 2-3 green chilies (chopped)
  • 2 tbsp soy sauce
  • 1 tbsp tomato ketchup
  • 1 tbsp chili sauce
  • 1 tsp vinegar
  • 1 cup water
  • 1 tbsp cornflour mixed with 2 tbsp water (slurry)
  • Spring onions for garnish

How to Make Veg Manchurian

1. Prepare the mixture

Take all the chopped vegetables in a bowl. Add salt, pepper, maida, and cornflour. Mix well. The moisture from vegetables will help bind everything. If needed, add a few drops of water.

2. Shape and fry balls

Make small round balls from the mixture. Heat oil in a pan and deep fry on medium heat until golden brown and crispy. Drain on paper towels.

3. Prepare the sauce

In a pan, heat oil and sauté garlic, ginger, and green chilies until fragrant. Add soy sauce, ketchup, chili sauce, vinegar, and water. Mix well.

4. Thicken the gravy

Add cornflour slurry and stir continuously until the sauce slightly thickens.


5. Combine

Add fried Manchurian balls into the sauce and toss gently until well coated.

6. Serve

Garnish with spring onions and serve hot.
