Delicious Mushroom Kofta Recipe for Every Occasion

Ingredients
1 bowl finely chopped mushrooms
2-3 tablespoons gram flour
1 teaspoon grated ginger
2 chopped green chilies
1/2 teaspoon turmeric
1/2 teaspoon red chili powder
1 teaspoon coriander powder
For the Gravy
1-2 tomatoes
1 green chili
1 inch piece of ginger
1/2 teaspoon coriander powder
1/2 teaspoon turmeric
1 teaspoon whole cumin seeds
2 bay leaves
Fresh cream as needed
2 tablespoons green coriander leaves
1 teaspoon garam masala
4-5 tablespoons oil
Instructions
Begin by finely chopping the mushrooms. Heat 2 teaspoons of oil in a pan. Once hot, add the grated ginger and chopped green chilies, sautéing them briefly. Next, incorporate the red chili powder, coriander powder, and turmeric, frying for a moment before adding 1-2 teaspoons of water. Once the spices are well-cooked, add the mushrooms and let them simmer.
In a separate bowl, combine the roasted mushrooms with gram flour and salt, mixing thoroughly and mashing the mixture. Heat oil in a pan and form koftas from the mixture, deep-frying them until they turn golden brown. Remove the koftas and set them aside. Prepare the gravy by blending the tomatoes, ginger, and green chilies into a paste.
Pour oil into the pan, and once heated, add the whole cumin seeds and bay leaves, frying them well. Add the tomato paste and sauté for 1-2 minutes. Then, mix in all the dry spices, including turmeric and red chili, allowing them to cook until the oil separates.
Once the spices are fragrant, stir in fresh cream and add water as needed to achieve the desired consistency. Bring the mixture to a boil, then gently add the koftas to the gravy. Season with garam masala and salt to taste, mixing well.
Cover the pan and let the dish simmer for 5-7 minutes before turning off the heat. Your delicious mushroom kofta is now ready to be served, garnished with fresh green coriander leaves.
