Pecan And Coffee Cake
Give the classic homemade cake a festive upgrade with the rich combination of coffee and crunchy pecans. This soft, aromatic cake is made with whole wheat flour and can be prepared without an oven using a saucepan and tawa.Ingredients
- 1/2 cup milk
- 2 tbsp instant coffee
- 1/2 cup yoghurt
- 1/2 tsp baking soda
- 3/4 cup sugar
- 1/4 cup oil
- 1 1/4 cups whole wheat flour
- 1 tsp baking powder
- 1/3 cup whole pecans, for garnish
How To Make Pecan And Coffee Cake
- Combine the milk and instant coffee in a bowl and keep aside.
- In another bowl, whisk the yoghurt and baking soda until the mixture becomes light and frothy.
- Add the coffee-infused milk, sugar and oil to the yoghurt mixture. Whisk until well combined.
- Add the whole wheat flour and baking powder, then mix until you get a smooth batter.
- Pour the batter into a greased and lined saucepan and arrange the pecans over the top.
- Cover the saucepan with a lid and place it on a tawa.
- Cook over medium heat for around 35–40 minutes, or until the cake is properly cooked.
- Allow the cake to cool before adding the glaze. Slice and serve.
Pista Sukhdi
If you want a traditional Indian sweet for your Raksha Bandhan menu, pista sukhdi is an excellent choice. Made with wheat flour, ghee, jaggery and pistachios, this melt-in-the-mouth treat combines familiar festive flavours with a nutty twist.Ingredients
- 50–70 g blanched California pistachios, chopped
- 1 katori ghee, plus 2 tbsp extra for the jaggery
- 1 1/2 katori wheat flour (atta)
- 2 tbsp besan, optional
- 5–6 cardamom pods, powdered
- 2 tbsp milk
- 1 katori jaggery
- Use the same katori for the major measurements.
How To Make Pista Sukhdi
- Finely chop the blanched pistachios and keep them aside.
- Heat 1 katori ghee in a heavy-bottomed pan. Add the wheat flour and roast over medium heat until golden brown and fragrant.
- Reduce the heat and add the besan, chopped pistachios, cardamom powder and milk. Mix thoroughly.
- In a separate pan, heat 2 tbsp ghee and add the jaggery. Stir until the jaggery melts into a smooth mixture.
- Pour the melted jaggery into the roasted flour mixture and stir quickly.
- Turn off the heat and continue mixing for about two minutes.
- Transfer the mixture to a greased thali and spread it evenly.
- Sprinkle chopped pistachios over the top.
- While the mixture is still warm, cut it into squares or diamond-shaped pieces.
- Allow it to cool and set for around 30 minutes before serving.
Kiwi Clouds
For a lighter and refreshing dessert, try kiwi clouds. The combination of juicy kiwi, fluffy whipped cream, cardamom and crunchy dry fruits makes this an elegant addition to a festive spread. It can also be assembled in individual glasses for easy serving.Ingredients
- 2–3 Chilean kiwifruits, peeled and sliced or chopped
- 250 ml chilled whipping cream
- 1/2 tsp cardamom powder
- 1/4 cup milk powder
- 1 tsp honey, optional
- Chopped dry fruits, for garnish
- Dried rose petals, optional, for garnish
How To Make Kiwi Clouds
- Chill a mixing bowl before preparing the dessert.
- Add the cold whipping cream and whisk until it becomes soft, light and fluffy.
- Gently fold in the cardamom powder, milk powder and honey, if using.
- Take individual serving glasses or bowls and add a layer of chopped or sliced kiwi.
- Spoon or pipe the whipped cream mixture over the fruit.
- Add another layer of kiwi and repeat the process according to the size of the glass.
- Finish with chopped dry fruits and dried rose petals for a festive presentation.
- Serve chilled.
