Ingredients

  • Wheat flour (atta): 2 cups
  • Jaggery (gud): 1 cup (or sugar)
  • Water: ½ cup
  • Grated coconut (optional): 2–3 tbsp
  • Cardamom powder (elaichi): ½ tsp
  • Fennel seeds (saunf): 1 tsp
  • Ghee (for dough): 2 tbsp
  • Oil or ghee (for frying): As required

Instructions

1. Prepare jaggery syrup: Heat water, add jaggery, stir until melted, strain, and let cool.
2. Make dough: Combine wheat flour, fennel seeds, cardamom powder, coconut, and ghee. Gradually add jaggery syrup and knead into firm dough. Rest for 10–15 minutes.
3. Shape Thekuas: Form small discs using hands or a mold; press gently for patterns.
4. Fry: Deep fry in medium heat until golden brown and crisp. Drain excess oil and store in an airtight container.

Thekua stays good for several days without refrigeration.
