Ingredients

For the potato filling:


  • 3 medium boiled potatoes
  • 1 tbsp butter
  • A pinch of turmeric
  • ½ tsp red chilli powder
  • Salt to taste
  • 1 cup chopped fresh coriander leaves
For the green chutney:

  • ½ cup mint leaves
  • 1 to 2 green chillies
  • 2 garlic cloves
  • 1 tbsp lemon juice
  • Salt to taste
  • A little water for blending
For assembly:

  • White bread slices
  • Thin tomato slices
  • Thin boiled beetroot slices
  • Thin capsicum slices
  • Thin onion slices
  • Cheese slices or grated cheese
  • Sandwich masala
  • Sev for topping

Method

Start by boiling and lightly mashing the potatoes. Heat butter in a pan, add turmeric and chilli powder, then mix in the potatoes and salt. Finish with fresh coriander.

Blend the chutney ingredients into a thick, smooth paste. Spread butter and green chutney on bread slices. Add a layer of potato filling followed by tomato, beetroot, capsicum and onion slices. Sprinkle sandwich masala and add cheese.


Cover with another bread slice and toast until golden and crisp. Once ready, spread a little butter and chutney on top, garnish with extra cheese and sev, then cut and serve hot with ketchup and chutney.

Method

Mix cream cheese, fresh cream and sugar until smooth. Transfer the mixture into a piping bag.

In another bowl, combine melted butter, garlic and coriander. Cut each bun into six wedges without slicing all the way through. Pipe the cream cheese filling into the cuts.

Dip each filled bun into the garlic butter mixture, ensuring they are well coated. Place them on a baking tray and bake at 180°C for 10 to 12 minutes until golden and fragrant.
